High Protein Banana Bread

High protein banana bread makes a perfect breakfast or snack, it’s packed with healthy fats and is very high in protein. It’s gluten free which is great for anyone with a gluten intolerance or Celiac disease. It’s free from refined sugar as the bananas are what add the sweetness and is rich in potassium. It’s also super delicious and easy to make. When you make your own food from scratch you know exactly what’s gone into it, this bread is free from trans fats which are usually found in processed foods especially cakes, biscuits and pastries, instead it has omega 3 and coconut oil to help keep your brain in tip top condition.

I believe that it’s so important to know where our food is coming from as much as possible and I know we can’t keep track of where everything comes from unless you grow or rear it yourself. I always buy organic eggs from a local source, it’s important to me that the hens are allowed to roam freely. Please keep in mind that organic doesn’t necessarily mean that the hen’s are treated well or allowed outside, it’s simply means that they were fed organic food.

Wet Ingredients

  • 4 organic eggs
  • 4 extra ripe bananas
  • 50g of melted coconut oil

Dry Ingredients

  • 20g crushed walnuts
  • 50g Pea protein
  • 1 tsp vanilla extract
  • 50g coconut flour
  • 1 tsp baking soda
  • 20g of cacao nibs OR sultanas
  • Pinch of pink Himalayan salt

 

Method

  1. Mix the wet ingredients together by hand or in a food processor.
  2. Place the wet ingredients in a bowl and add the dry ingredients and mix well.
  3. Transfer to a loaf tin that has been greased with coconut oil.
  4. Bake for 45mins at 180c.
  5. Remove from tin and allow to cool…easier said than done and devour!!
  6. This bread freezes very well , so it’s a great idea to batch bake.
