Speedy chickpea salad will leave you with no excuses when debating about embracing a healthier lifestyle. One of the main challenges I find my clients come up against when starting a healthier eating plan is the amount of time they fear will have to dedicate to it. They become overwhelmed about the time spent in the kitchen, when this kicks in they tend to move back into old negative eating patterns which have been causing them to feel exhausted, bloated or worse. Today I want to show you how fast and easy it is to make this deliciously tasty chickpea salad, that is perfect for lunch or dinner

Ingredients

  • 1 tin chickpeas (rinsed and drained)
  • 1 dsp sun-dried tomatoes (chopped)
  • 1 dsp green or black olives (chopped)
  • 2 spring onions (chopped)
  • 2 dsp light tahini paste
  • Pinch of pink Himalayan salt and pepper

Method

  • Combine all the ingredients in a bowl, mix well.
  • Serve with a large colorful salad or have with a whole meal wrap/pitta with lots of salad.
