Chocolate Chia Pudding

Chocolate chia pudding is the bomb!! It’s not just a healthy dessert, it’s also delicious for breakfast too. I use whole chia seed and I grind them in my Nutri Bullet using the flat blade. I prefer using whole chia seeds as they stay fresh longer. You don’t need to grind the chia seeds if you don’t want to, you can leave them whole and you will get a tapioca type of texture. Chocolate chia pudding is super for your little ones too, they can rock up to school with a healthy chocolate snack that will give them energy for hours.

Ingredients

  • 20g milled chia seeds
  • 150ml unsweetened almond milk
  • 1/4 tsp vanilla extract
  • 1 tsp smooth all natural almond butter (or other nut butter)
  • 1 tsp raw honey
  • 1 tbsp raw cacao powder (or more if you like a stronger chocolate taste)

Method

  1. Mix together the milled seeds and almond milk in a jug/glass/Nutri Bullet cup. Place in the fridge for 15-20mins.
  2. Add in all the other ingredients and blend until smooth, add a splash of almond milk if the consistency is too thick for your liking.
  3. Divide between two small glasses/jars, top with cacao nibs, goji berries and blue berries.
  4. Store in the fridge until ready to serve; up to 2 days.
