Dairy Free Pesto

Dairy free pesto is super delicious and you’d never know it was cheese free. When I gave up dairy the one think I missed was cheese and the flavour it adds to food. I really missed pesto so I decided to make my own and you know what it was easy peasy. All I needed to do was substitute the cheese with nutritional yeast. I use pesto on so many dishes, I make a delicious pizza and instead of cheese I use pesto and sprinkle extra nutritional yeast over it of that cheesy flavour. I also use the pesto as a dip or I add extra olive oil and make it into a salad dressing.

Ingredients

  • 1 large handful baby leaf spinach
  • Small handful basil leaves (optional)
  • 2 cloves of garlic
  • 2 tbsp pumpkin seeds
  • 2 tbsp extra virgin olive oil
  • 2 tbsp nutritional yeast
  • Pinch of pink Himalayan salt

Method

  1. Peel and chop the garlic.
  2. Place all the ingredients in the Nutri Bullet or blender and blend until smooth.
  3. Place in an air tight jar and store in the fridge for 3-4 days.
