Protein bars ROCK, I just LOVE them! I eat very little animal protein and this it a tasty and easy way to up my protein intake. Now please allow yourself to be flexible and maybe go a bit crazy with the ingredients, honestly I actually just pulled out a load of ingredients out of the press and hoped for the best…and you know what…it turned out very yummy indeed!!
Ingredients
- 100g Chia seeds
- 100g Pumpkin seeds
- 100g Goji berries
- 80g Coconut oil, melted
- 50g Ground flax/linseed
- 50g Sunflower seeds
- 50g Sesame seeds
- 50g Cacao nibs
- 50g Pea protein powder
- 1 Jar of almond butter (170g) smooth or chunky
- 2 tbsp of cacao powder
- 4 Tbsp raw honey
Method
- Put all the seeds in a food processor and blitz for a few seconds to break them up a little.
- Put the seed mix into a large bowl and add the cacao nibs, gogi berries, cacao powder and pea protein, mix well.
- Finally add the coconut oil, honey and almond butter, then roll up your sleeves and mix well.
- You should now have a sticky consistency, if you don’t feel it’s sticky enough add a drop of water.
- Place in a square dish lined with parchment paper and press down well, pop in the fridge for a couple of hours until solid.
- Cut into about 20 pieces, pop into an air tight container and store in the fridge for up to two weeks…if they last that long!
