I’m so happy to be sharing these little slices of heaven with you…theses brownies are dairy free, wheat free, with no added sugar or trans fats! They truly are a healthy dessert and they tastes YUMMY! You will get about 9 large brownies or 18 to 27 small ones, I cut mine into finger sizes because I found them so rich. Enjoy!
Ingredients:
- 340g (2 cups) pitted dates (soaked for 1-2 hours in water if particularly dry!)
- 90g (2/3 cup) cacao
- 100g (1 cup) oats
- 60g (½ cup) almonds + 30g (¼ cup) for topping
- 60g (½ cup) walnuts
- 1 tsp vanilla extract
Method
- Blitz oats and nuts (holding back the 30g of almonds for topping!) in a food processor until finely ground. Mix with cocoa powder and set to one side.
- Blend the dates to smooth puree (add a little water if the consistency isn’t achieved through blending starting with 1 tbsp).
- Mix the wet and dry together with vanilla extract and blend in a food processor until the mixture comes together to form a soft dough. It will be wet, a little sticky but not overly so.
- Place dough in a square silicon baking tray and spread using the palms of your hands. It’s worth spending a few minutes to ensure it’s evenly distributed.
- Grind the remainder of the almonds and sprinkle over the top.
- Place in the fridge for 2-3 hours for them to firm up before slicing in to your desired number of brownies.
- These will keep in the fridge for a couple of weeks and can also be frozen for a couple of months. Thaw in the fridge.
